Tasty Stuffed Peppers
4 medium sized green peppers
1 lb of lean ground beef
1 cup of cooked white rice
1 egg
1/2 cup of bread crumbs
basil, salt, and pepper to taste.

Cook your white rice, then cool.  While rice is cooling, cut out the tops and the cores of your green peppers. Combine the rice, egg, bread crumbs, seasoning and meat in a bowl and mush together.  Stuff the peppers with the meat/rice mixture.  Put in a glass dish and cover with tin foil.  Cook at 425 for 60 minutes.  I make a little red sauce to serve with it.

Easy BBQ
1 lb lean ground beef
Minced onion to taste
3/4 cup of ketchup
2 tablespoons of sugar
2 tablespoons of mustard
1 tablespoon of white vinegar
Brown ground beef and drain the fat.  Combine the rest of the ingredients in the skillet and bring to a low simmer.  Serve with yummy chips or french fries!  This is great if you are feeding a lot of people.  You can double or triple the recipe.  Cheap and easy and the kids will eat it!

Taco Dip
1 can of re-fried beans
1 lb sour cream
1 packet of taco seasoning
1 bag of finely shredded cheese
3 Roma tomatoes
Spread a layer of re-fried beans on a nice size dish (my wife calls it a platter).  Then mix 1/2 of the taco seasoning with the sour cream.  Spread that on top of the beans.  On top of the sour cream mixture, spread your shredded cheese.  Chop your tomatoes up into small cubes and sprinkle them on top.  Serve them with tortilla chips.  My favorite are Manny's. Sit back and enjoy the game.  You have your done part.

Crock-pot Italian Beef (mmm....meat AND beer!!!)
2-3 lb rump roast
1 can of Pabst Blue Ribbon Beer
1 can of water
1 packet of dried French onion soup
Place the rump roast in the crock pot.  Pour the can of beer in the crock-pot and then fill the can with water and pour that in as well.  Sprinkle the dried onion soup over the roast.  Cover and turn the crock-pot on low for about 8 hours.  Take a fork to the roast when it is done.  It will fall apart.  Serve with Giardinaire or peppers on tasty rolls.  I like to throw in some salty chips like my hometown Old Salty's or Mrs. Fishers on the side.  Your wife will love to come home to a house that smells like you have been busting your hump all day making dinner.

Baked Ravioli
1 bag of frozen Rosetto beef ravioli. (2 bags if you have a bigger family)
1 standard jar (1lb) of Ragu Traditional Sauce or the larger jar (2lbs) if you use two bags of the "rav".
1 Bag of Shredded mozzarella Cheese

In a casserole dish, pour a light layer of sauce.  Then take about half the bag of ravioli and spread it out.  Pour more sauce over the ravioli, and then sprinkle some mozzarella.  Then layer the rest of the "rav" and again drench with more sauce and mozz.  Cover and bake at 325 for 45 minutes covered and then 15 more minutes uncovered.  Let stand for about 10 minutes and serve.  This will completely impress your wife as she tries to figure out how you managed such an impressive meal...

Tortellini Soup
2 bags of frozen tortellini
1 large can of chicken broth
1 green pepper
1 red pepper
1 onion
1 can of italian style diced tomatoes
garlic salt and pepper

First, boil your tortellini.  Drain and place back into the pot in which you boiled the pasta.  Then add your large can of broth, diced red and green pepper, and onion, the can of diced tomatoes, basil, and salt and pepper to taste.  Bring to a boil and then bring back down to a simmer until veggies are tender.  Stir occasionally. Ask your wife to stop by your local bread store on the way home for some fresh bread.  Our favorite is the garlic 3 cheese from Great Harvest Bread Company.

This will serve a family of 4 and there will definitely be leftovers for your lovely lady's lunch the next day.  You will surely score points on this one!
