      Do you need to carb-load to survive Black Friday? Do you miss mashed potatoes on your Thanksgiving table? Not to worry I have some tips for you. While potato allergies are not in the top 8 (the top 8 food allergies being: wheat, fish, shellfish, soy, milk, eggs, treenuts and peanuts) they still exist. While some might not be technically allergic to potatoes they feel better not consuming them or any <a href="http://www.whfoods.com/genpage.php?tname=george&amp;dbid=62">nightshades</a>.<div><br /><div><span class="mt-enclosure mt-enclosure-image" style="display: inline;"><div class="pkg embedded-image right" style="width: 140px"><a rel="lightbox" href="http://www.chicagonow.com/blogs/chicago-eats-allergy-free/potato%20with%20butter.jpg" title="potato with butter.jpg"><img alt="potato with butter.jpg" src="http://www.chicagonow.com/blogs/chicago-eats-allergy-free/potato%20with%20butter.jpg" width="140" height="140" class="mt-image-right" /></a></div></span></div><div><br /></div></div>
      Instead of mashed potatoes I like to substitute cauliflower. This recipe is also great if you are on a low carb diet.<div><br /></div><div><b>Mashed Cauliflower</b></div><div><br /></div><div><b>What you need</b></div><div><ul><li>1 medium head of cauliflower</li><li>1/4 cup of any of these: milk, cream, butter, soy milk or creamer</li><li>Salt and pepper</li><li>A few options: a clove or two of minced garlic; garlic powder (1/2-1 tsp); 1/4 cup of cheddar cheese if dairy is not an issue and if it is try nutritional yeast flakes</li></ul></div><div><br /></div><div><b>What to do</b></div><div><ul><li>Chop and steam the cauliflower</li><li>Then put the cauliflower in a blender or food processor and add the rest of the ingredients</li><li>Blend or pulse until it has a creamy texture like mashed potatoes. Just like regular mashed potatoes blend more if you like them creamy, blend less if you prefer them to be lumpy</li></ul></div><div><br /></div><div><b>A few other tips:</b></div><div><ul><li>Try French fries with sweet potatoes. Trader Joe's sells a pre-made version in their freezer section</li><li><a href="http://www.dairyfreemarket.com/">Dairyfreemarket.com</a>&nbsp;showcases products free of potato. The owner, Jeff Eder, has a potato allergy himself and empathizes</li><li>Instead of potato chips there are other options like zeggie chips on the market. You can also make at home with thinly sliced sweet potatoes and zucchini</li><li>Ask Santa for a dehydrator. I will be posting more about the beauty of dehydrator ownership in future posts. I use mine to make kale chips.</li></ul><div><b>Kale Chips</b></div><div><br /></div><div><b>What you need</b></div><div><ul><li>1 bunch of kale</li><li>2-3 TBS olive oil</li><li>1 TBS apple cider vinegar</li><li>Dash or two of sea salt</li></ul><div><b>What to do</b></div><div><ul><li>Cut the kale into smaller pieces</li><li>Marinate in the olive oil,&nbsp;apple cider vinegar, and a dash of sea salt</li><li>After an hour or two, paper towel off the excess and place in your dehydrator without the teflon sheets</li><li>Set your dehydrator to 115 degrees. You can also put them in the oven at 400 degrees for about 15-20 minutes.&nbsp;</li></ul></div><div><br /></div><div>These taste great, provide that yummy crunch you get from chips but with a ton of nutrient dense goodness.</div></div><div><br /></div></div><div></div><div><br /></div>
