Fast, easy fudge recipe perfect for tasty last minute gifts

My mom has given me many gifts over the years, and now I'm going to share one with you - her fudge recipe. With only three ingredients, this is the easiest, quickest recipe ever,  and it makes the best fudge, in my family's opinion. I've given as it a gift for years and have received many thanks, rave reviews and requests for the recipe.

It used to be that I was embarrassed to tell people how it was made, given that it is so, SO easy. I've gotten over that. It is made with love and thought, even if it doesn't take long.

It is a great recipe for tweens to make on their own given that it only calls for microwaving, and while they need to be careful with the hot mixture, it is something they can handle.  Once you hit middle school, it can be tough to know what to do for teacher gifts.  A small package of fudge is the perfect answer. And if your stash of cookies is running low, this is the quick answer to delicious holiday sweets to have at home. It is also fun to leave some in them mailbox for the letter carrier, or on the porch for a neighbor.

Tweens can make it for their friends as they are old enough to appreciate that even a little bit of effort shows some thought.  This season I've send in the various sweets we have made for the 5th grade lunch table, including cinnamon chip cookies, peanut butter chocolate kiss cookies, chocolate cookies, and fudge. Yesterday, fudge was declared the big winner.  My tween will be whipping up a batch this afternoon to take to her friends for the last day of school tomorrow.

Fudge

Combine 1 12 oz. package of chocolate chips (2 cups) with 1 14 oz. can of Eagle Brand sweetened condensed milk.

Microwave on high for 3 minutes.

Stir in 1 1/2 t. vanilla extract until mixture is shiny.

Pour into an 8x8 pan lined with foil.

Refrigerate 2 hours.

Once you remove it from the foil, I find it is easiest to cut with a knife run under some warm water.
