Last week we got to celebrate Lucia’s fifth birthday and for the first time in my life I co-hosted a low key, stress free, kids’ birthday party where absolutely everyone had a blast. No Martha Stewart this time around, just a few trips to Costco, Party
City and Target did the trick.
My good friend Stephanie has a daughter that is Lucia’s age and since we pretty much have the same friends in common it seemed like a fabulous idea to throw a joint birthday party for our daughters. We wanted them to have a great birthday with all of their friends, taking advantage of the Park District’s splash pads that only open from Memorial Day to Labor Day.
The park was fabulous; it offered a nature trail, picnic tables located in a spacious shelter within sight of the playground and splash pad. The restrooms where nice and clean and there was enough parking for a huge group of people. Since the girls wanted a princess themed party, it was quite easy for us to put everything together. One trip to Party City and Target and we got everything from cupcakes to piñata and everything in between. We also needed to think about food and
beverages for both kids and adults but since the party was from 3:00 pm to 5:00 pm, it was going to be pretty low key.
We had sodas, juice boxes and water bottles and the guys made hotdogs for all the kids. I prepared my famous sandwichitos de mezcla and a pasta salad and Stephanie made PB & J mini sandwiches for the kids. We also had chips, fruit and candy. No crazy buffet tables or gourmet treats this time around for me, just a relaxing, super fun, stress free party for the kids…Quite a new and refreshing experience for your Puerto Rican Martha. Ay Mama!
Because everything was a s easy as 1, 2, 3, for today’s recipe my easy and quite fantastic pesto pasta salad with pine nuts. Enjoy!
-Two boxes of tricolor tortellini
-Cherry tomatoes (for decoration)
-Your favorite pesto sauce
-1/2 cup toasted pine nuts
Boil pasta according to instructions on the box. Drain and shock with iced water. Drain. Add pesto sauce and mix well.
Toast pine nuts on hot skillet until golden brown and add them to the pasta salad. Decorate with cherry tomatoes. Buen provecho!
