Fat to Fit: Tried and approved vegetarian recipes

One of the perks about being in a community like ChicagoNow is the amount of resources we have at our disposal thanks to the hard work and dedication of others.

For example, when one of the members of Quinntessential Health suggested we start having a vegetarian day as a theme day, I turned to Ups and Downs of a Yoga Mom.

Beth, the voice behind Ups and Down of a Yoga Mom,  has been blogging on ChicagoNow since 2010. During that time, she has dedicated regular posts to vegetarian recipes under the theme Meatless Monday. Considering that our health group is also going meatless on Mondays, I figured I would share my favorite recipes from Beth's blog here for everyone to enjoy.

Of course, you may ask why I am sharing them on a day that is not Monday, and the reason is so that everybody has a chance to get the store before Monday arrives. If you like the recipes, be sure to let Beth know, and if you have new recipes to share, be sure to post them in the comments below.
