One of the perks about being in a community like ChicagoNow is the amount of resources we have at our disposal thanks to the hard work and dedication of others.
Beth, the voice behind Ups and Down of a Yoga Mom, has been blogging on ChicagoNow since 2010. During that time, she has dedicated regular posts to vegetarian recipes under the theme Meatless Monday. Considering that our health group is also going meatless on Mondays, I figured I would share my favorite recipes from Beth's blog here for everyone to enjoy.
