The surprising realization that Fried Pickles and Ice Cream have lots of calories...

The weekend is finally upon us. I hope everyone is doing okay with Say No To Small Dose Friends February. I will have more posts on that topic as the month goes on. However, this post is going to focus on being healthy again.

I kicked started a New Year, New Me in the middle of last month. I had done really well until last weekend. Over the course of three days I managed to eat pizza, ice cream, fried cheese, McDonald's, tons of bread, and fried pickles. They were all consumed at different meals, but all within the same weekend.

Of course, when I stepped on the scale Monday, I discovered that I had gained over 2 pounds since my last weigh-in.

That gain gave me motivation, so this week I was on track and on target all week. I stayed healthy and did well. Now, I just have to make sure that I keep it up until Monday. It will not be a hard thing to do; however, sometimes it is just nice to eat junk food on the weekend. Of course, the guilt of a Monday morning weigh-in should be enough to keep me on target through the next two days.

One thing I have discovered that keeps me on track is finding great new recipes. One recipe that I found, I am going to share with you today. I discovered this in a USA Weekend a few weeks back.

I made this for Kyle and Jen, and they loved it. So here is your Reuben Burger (vegetarian style):

Ingredients:

  • 2 cans (15.5-ounces each) pinto beans, drained, liquid reserved, 1 can left whole, 1 can fork-mashed
  • 1 cup dry breadcrumbs
  • 2 large eggs, lightly beaten
  • 1 tsp. each: coarsely ground pepper and garlic powder
  • 1/2 cup light mayonnaise
  • 2 Tbs. prepared cocktail sauce
  • 6 good quality whole wheat hamburger buns
  • 1/4 cup olive or canola oil
  • 6 thin slices Swiss cheese (4 1/2 ounces)
  • 2 cups sauerkraut, drained

Directions:

1. Mix beans, breadcrumbs, eggs, pepper and garlic in a medium bowl adding enough bean liquid for mixture to hold together without being wet. Divide into 6 equal portions and flatten into 4-inch patties. Mix mayonnaise and cocktail sauce; set aside.

2. Warm buns in a 300-degree oven, about 5 minutes. Meanwhile, heat oil in a large (12-inch) skillet over medium-high heat. Add patties and cook, turning only once, until a crisp brown crust forms on both sides, 6 to 8 minutes total. Top burgers with cheese slices, cover skillet, turn heat to low and let burgers continue to cook until cheese melts.

3. Spread cut side of each roll with the sauce. Set burger on bun bottom, top with sauerkraut, cap with bun top and serve.

Not only is it delicious, if you are watching what you eat, an entire burger is only 556 calories. Unfortunately, it boosts 1,171mg of sodium; however, if you buy low sodium products you can knock that figure down quiet a bit.

Anyway, we will see if this recipe and other healthy treats will put me back on the loosing end of the weight scale come Monday.
